Ingredients :
- 4 veal cutlets
- 200 g breadcrumbs
- 2 eggs
- Grated parmesan cheese (optional)
- Flour
- Butter
- Lemon juice
- Salt & Pepper
1) Prepare 3 plates. One with flour, a second with the eggs beaten into an omelette and a third one with the breadcrumbs. If you wish, you can mix one third of grated parmesan with two thirds of breadcrumbs.
2) Flour the cutlets. Then dip them in the egg and finally in the breadcrumb (and parmesan) mixture.
3) Melt a butter/oil mixture in a frying pan until it becomes foamy. Cook the cutlets for 5 minutes on each side on low heat, so that the cutlets get a nice colour without drying out. Turn them over gently.
4) Garnish with a few lemon wedges. It's ready!
